Gellan Gum is a high molecular weight polysaccharide gum produced by a pure culture fermentation of a carbohydrate by Pseudomonas elodea, purified by recovery with isopropyl alcohol, dried, and milled. It appears as an off-white powder, and it is often used as a thickener, emulsifier, and stabilizer. This product is mainly used in soya milks to keep the soy protein suspended in the milk, and it can also be found in candy, dairy products, jam, and flour.
