Pectin

Pectin is a plant extract that is white to light brown powder derived from primarily citrus fruits. Classified as E440, it is used as an emulsifier in jams, marmalades, fruit and confectionery jellies, yogurt and dairy drinks, whipped cream, milk gels and desserts, and salad dressings.
