Purple Carrot Juice Concentrate

Purple Carrot Juice Concentrate is produced by careful evaporation of the native juices of the purple carrot, D. carota. This product appears as a reddish to purple viscous liquid with a taste and odor characteristic of the purple carrot. It is resilient in all pH ranges, and performs well in bakery applications that want to color natural fruit fillings. It can be used in soft drinks at low pH in order to achieve a raspberry or cherry color. In neutral pH applications, such as dairy or ice cream products, it can be used to achieve a blue or violet colors to complement blueberry products.
