Anise, Star

Anise, Star is a large, hard, brown, star-shaped fruit from small evergreens in China. This product has an anise-like, and therefore, licorice-like, flavor but has harsher off-notes. It can be used as a less-expensive substitute for anise in Western cooking and a flavorant in many liquors. Anise, Star is a spice in biryani and masala chai in Indian cooking, is used as a constituent of traditional five-spice powder in Chinese cooking and as a major ingredient in Vietnamese noodle soup. It is only available as the whole fruit, which is dried before it ripens.
