The mature, cured black olives are sized, pitted and sliced. The sliced olives are inspected, rinsed with fresh water and pass through an HT/ST (High Temperature/Short Time) microbiological system that guarantees a pathogen free product. The sliced olives are then individually quick frozen (IQF) to preserve natural flavor and color, screened for uniform size, metal detected and packed in poly lined cases or totes. Finished product is stored at -10° F. Benefits for this product are: No cans to open. Eliminates possibility of metal fragments. No draining of brine before use.
