Burgundy Cooking Wine is the product of the alcoholic fermentation of the juice of grapes to which salt is added. This product is a bright, clear, dark red color, free from cloudiness, and has a clean full-bodied wine flavor and aroma, free from foreign flavor or aroma. Burgundy Cooking Wine has an alcohol content of 10.5 – 12.0%, and a Volatile Acidity (Tartaric Acid) amount of 0.18g/100ml (Max.), and a salt (by weight) amount of 1.5% +/- 0.1.
