In the Food Industry potato starch is used frequently because it has a higher viscosity and thus a higher binding strength than that of corn starch. Südstärke's potato starch is gluten free and GMO free. They manufacture both Cook-Up Starches that can be suspended in cold water and then swell when heated and Cold Water Soluble Starches that dissolve or swell in cold water.
