It is used for thickening and gelling foods without affecting color or flavor. Since its gelling power is ten times higher than animal gelatine, it is effective at very low levels. In addition, Agar-Agar has a very high content of soluble fiber (almost 90% by weight) and minerals, so it is often included in dietetic foods. Unlike other food hydrocolloids such as carrageenan and pectin, agar does not require other agents (such as salts) to form gels. Thus, it contributes much less to ash content than other gelling agents. Agar-Agar can be used in confectionery (jellies, caramels, toppings, jams, cake and doughnut icings), dairy products, canned foods, baked goods, soups and casseroles. view less

The water quality in this region has the least heavy metals thereby providing the highest gel strength for the agar. The unique characteristics of agar include high gel strength, high solidification and minimal syneresis. Agar is used in the food, beverage and pharmaceutical industries. Applications include ice cream, pulp drinks, soft candy, milk chocolate, dessert, canned goods, jam and jelly. Agar can improve texture and mouth feels in many food products and is Kosher certified. view less
Carrageenan Colony Gums Carrageenan is a cell-wall hydrocolloid found in certain species of seaweeds belonging to red algae. It is a gelling, thickening, and texturizing agent. Water dessert gels can be made without gelatin by using Carrageenans as the gelling agent. An advantage of this is that prepared gels can have a very long shelf life and are stable at fairly high temperatures. Fish gels and aspics can be made quickly and inexpensively using Carrageenans. Many gel-type candies formerly made with Agar are now using Carrageenans as a total or partial replacement for Agar...view more Carrageenan is a cell-wall hydrocolloid found in certain species of seaweeds belonging to red algae.
