Produced by Lactococcus lactis, a naturally occuring bacterium in milk, it is generated by fermentation, concentration, separation, drying, and then blending with salt for standardization. The product is particularly effective against gram-positive bacteria, including vegetative cells and spores. Nisitrol is an off-white to slight beige powder with a mild odor, which is soluble in water and in aqueous mediums. It inhibits certain pathogens in food, such as C lostridium botulinum, Bacillus-subtilis, Bacillus stearothermophilus, Staphylococcus aureus and Listeria. Classified as E234, it is used as a preservatinve in dairy products, dressings and sauces, canned vegetables, juices, pasta, cakes and pastries, alcoholic beverages, and meat products. view less
