CMC 4000, also referred to as Grade A Sodium Carboxymethyl Cellulose, is a water soluble cellulose gum. It is certified USP, FCC IV, and Kosher. It has a viscosity of 4,000-5,000 cP and functions as a thickener, stabilizer, binder, film former, and suspending agent. This product is commonly used in dressings, ice cream, baked goods, puddings, and sauces.
