It has a higher protein and soluble fiber content than other insoluble fibers. It is from the indigestible portions of plants. It is metabolically inert, absorbing water throughout the digestive system. It swells in water and help to increase bulk, soften stool and shorten transit time through the intestinal tract. It is commonly used as an ingredient to increase fiber content in bread and bakery products.
