CrystalBan™

CrystalBan™ is sodium gluconate in granular form. It is mixed with sodium chloride and is applied to cheese at the last or next to last salting stage. The product decreases lactic acid production during the cheese making process, improving reduced sodium cheddar and American cheese quality by reducing acidity and maintaining flavor. CrystalBan™ also helps extend storage life and appearance of cheeses.
