Ethyl Vanillin Propylene Glycol Acetal (831) 

Ethyl Vanillin Propylene Glycol Acetal (831) is a slightly yellow viscous liquid used as a flavor and a fragrance. It has a vanilla odor with a spicy, clove-like undertone. Ethyl Vanillin Propylene Glycol Acetal (831) is used as a replacement for Ethyl Vanillin, it is stable in alkali and has little discoloration. As a flavor it is smokey and not creamy-guaiacol but adds smoky, vanilla notes to a variety of flavors, especially milk chocolate. This is similar to Ethyl Vanillin Propylene Glycol Acetal 80-85% (833), which contains ca. 20% Ethyl Vanillin. It is insoluble in water and soluble in alcohol.
