Deproteinized Whey

Deproteinized Whey is the product produced when sufficient protein is removed from whey so that the finished dry product contains greater than 80% Lactose. Deproteinized whey is produced from sweet dairy whey by means of ultra-filtration. This product has a clean flavor, with no objectionable off-flavor. It consists of 3.6% protein, a maximum of 4.5% moisture, 83.0% lactose, 0.2% fat, 8.4% ash, 0.12 titratable acidity, and pH value of 6.0. The actual shelf life of extra grade deproteinized whey will vary based on actual storage temperature. Under dry storage conditions, at room temperature under 80°F (27°C), its expected shelf life is up to 12 months. Freezing could also shorten the shelf life.
