AmyloGel® Native Starches are derived from high amylose maize with either 50% or 75% amylose content. These starches are insoluble in cold water and swell to different degrees, depending on temperature. AmyloGel® Native Starches have thickening, gelling, moisture retention and anti-staling properties.
