Alginates

Alginates are salts of alginic acid, which are extracted from brown seaweed and used as partially nonthermoreversible gelling and thickening agents. It is a polysaccharide that occurs naturally in brown algae as a skeletal component of their cell walls. Alginate is used in food because it is a powerful thickening agent, stabilizing, and gel-forming agent.
