ARM & HAMMER® Sodium Bicarbonate USP Grade 2 is a white crystalline powder chemical. The narrow particle size distribution of Grade 2 facilitates rapid, uniform blending. It is used in products which require long bench time and in refrigerated and frozen dough and batters which require minimal leavening during preparation and storage. This grade is also recommended for baking powder where pre-reaction during storage can be a problem.

This product is stable in dry air, but slowly decomposes in moist air. Its solutions, when freshly prepared with cold water, without shaking, are alkaline to litmus. The alkalinity increases as the solutions stand, are agitated or are heated.
