In non-dairy creamers, SAPP is added to protect the proteins from heat dehydration, to stabilize the fat emulsion, and to buffer the product. Processed potatoes are protected from iron-induced darkening when treated with SAPP. Addition of SAPP to albacore tuna during canning decreases or prevents formation of struvite crystals.
