Water dessert gels can be made without gelatin by using Carrageenans as the gelling agent. An advantage of this is that prepared gels can have a very long shelf life and are stable at fairly high temperatures. Fish gels and aspics can be made quickly and inexpensively using Carrageenans. Many gel-type candies formerly made with Agar are now using Carrageenans as a total or partial replacement for Agar. It is used in dairy, salad dressing, beverages, pharmaceuticals, and cosmetics. view less

The water-binding and rapid hydration of Guar in cold water to form a viscous colloidal solution is its most important characteristic. These properties are utilized in ice cream stabilizers, especially in high temperature, short-time processes, where conditions call for 80° Celsius, for 20–30 seconds. It is used as a stabilizing, thickening, and controlling agent in dairy, bakery, meat, and beverage applications. view less

The main uses of Arabic are based upon its properties of emulsification, protective action, adhesiveness, thickening, binding, and stabilization. Its major use is in the food industry to impart viscosity, body and texture to a variety of foods. In addition, it is non-toxic, odorless, colorless, tasteless, and completely water-soluble. Arabic prevents sugar crystallization in jujubes and pastilles where sugar content is high and the water is low. In caramels and toffees it prevents the fat from surfacing and forming and easily oxidizable, greasy film. It is also used as a glaze in candy products. view less

The commercial powder is 140 mesh and varies from buff to dark brown. The lightest color has the least impurities and the greatest effectiveness in most applications. Gum Ghatti is 80 to 90% soluble in water and can be dispersed in hot or cold water to form a colloidal sol. Ghatti dispersions are not affected by small amounts of acid or alkali since the gum acts as a buffer and reverts to its normal pH of about 4.8. It is used as a stabilizer and acidizing aid in butters and syrups. view less

Karaya, at 0.2–o.4% alone, or at 0.15% locust bean gum, stabilizes ice pops and sherbets by preventing the formation of large ice crystals and preventing the migration of free water or syneresis. Karaya, used in meringue powders, enables a greater volume of meringue to be prepared from a fixed amount of protein. In cheese spreads, 0.8% or less, Karaya is used to prevent water separation and to increase spreadability. Its acidic nature is not objectionable in these dairy products. Karaya, Carrageenin and locust bean gums have been used to stabilize natural and imitation whipping cream. view less

Because of its relative stability to heat, acidity, and aging, Tragacanth is widely used as a thickener and stabilizer in pourable salad dressings of the regular and low calorie types. For similar reasons, it is used in relish sauces, condiment bases, sweet pickles, liquors, and mayonnaise. It is used at about 0.4–0.75% in the above products. Tragacanth provides clarity and brilliance to frozen pie fillings and toppings in which suspended fruit, fruit purees and flavors are used. The gum gives good shelf life to these acidic products. view less

Fresh Konjac contains an average of 13% dry matter and 64% of the dry matter is glucomannan. Glucomannan is a type of soluble dietary fiber. Soluble fibers attract water and form a gel, which slows down digestion. It can delay the emptying of your stomach and makes you feel full, which helps in weight control. Slower emptying of the stomach may also affect blood sugar levels and have a beneficial effect ion insulin sensitivity. Konjac can also help lower LDL (“bad”) blood cholesterol by interfering with the absorption of dietary cholesterol. Various types of jelly, pudding and fat-free confectioneries can be made by adopting different concentrations of the compound gum and adjusting to different pH values. view less

It is used in speeding the coagulation of cheese curds, and slows and thickens the melting of ice cream. When used with cake and biscuit dough, Locust Bean gives a higher yield with a considerable reduction in the amount of eggs necessary. Also, the cakes are softer, have a longer shelf life, firmer texture, can be easily removed from the pans and can be cut or sliced more easily. About 1-2% Locust Bean Gum is used in fruit pie fillings to yield a clearer, more fruit-like filling, which is more palatable and does not mask the flavor. Locust Bean Gum, in combination with other hydrocolloids, stabilizes a variety of prepared foods as instant dry sauces and soups, frozen concentrated soups and frozen butter and cheese sauces for vegetable and fish dishes. This gum also stabilizes and thickens mayonnaise, tomato catsup, and natural as well as imitation whipped cream. view less

Xantham Gum is a white to pale white powder and mainly is an 80–100 mesh. Particle size can vary depending on the customer specifications and can consist of an agglomerated product to fine 200 mesh powder. Xanthan Gum is stable in applications with a wide range of pH values (2–12). It has a tolerance to enzymes, salt, and heat. For instance, Xanthan Gum in a 1.1% citric acid/citrate solution at a pH of 3.4 at 90C for 24 hours showed excellent thermal stability. Xanthan Gum also exhibits excellent freeze-thaw stability. It has innumerable applications spanning from foods to mining. view less
