Baking Starch is a free-flowing potato starch that acts as a release agent. It is a cooking starch that can be suspended in cold water and when heated, the granules swell and thicken. Baking Starch is used in the formation of bread and bread rolls.

In the Food Industry potato starch is used frequently because it has a higher viscosity and thus a higher binding strength than that of corn starch. Südstärke's potato starch is gluten free and GMO free. They manufacture both Cook-Up Starches that can be suspended in cold water and then swell when heated and Cold Water Soluble Starches that dissolve or swell in cold water.
