Bioprotease, product code 26006, is a proteolytic enzyme obtained by the solid state fermentation of Aspergillus oryzae. This product reduces mixing time by up to 25%, improves extensibility and pliability of dough, and improves the texture and shape of the finished product. Bioprotease is used in bread, rolls, crackers, khari, and patties.
