Sodium Citrate 

Sodium Citrate is a colorless or white crystalline powder. It has and salty and cold taste and is odorless. In the food processing industry it is used as a buffer, chelateing agent, nutrient additive, emulsifier and flavor for yoghurt. In the pharmaceutical industry it is used as an anticoagulant and as a binder in cheese and minced meat, acid coagulant in jellies and jam and as an emulsifier and stabilizer in cheese and ice cream.
