OptiSol® 1051 

OptiSol® 1051 is a milk protein isolate that uses a natural milk stabilizing system to replace gelatin across Canada. It consists of a moisture content of <5.5% and has a pH value of 6.0-7.0. It contains milk ingredients and could be an allergen to those with milk allergies. OptiSol® 1051 is certified kosher and halal and is used in refrigerated desserts, yogurt, and sour cream.
