Tranglutaminase TG-H 

Tranglutaminase TG-H is a naturally occurring enzyme that catalyzes the reactions of cross-linking intra-and intermolecular of proteins and thereby improve the capability of the food protein. It has TG activity of 1,000u/g. It functions as an emulsifier, gelling, thickening, and/or binding agent, and thermal stabilizer. This product is commonly used as an additive in a variety of industrial meat, seafood, dairy, noodle, and baked good applications.
