Lemon Extract 

Lemon Extract is derived from the fruit of the lemon. The fruit juice is about 5% to 6% citric acid, which gives lemons a sour taste, and a pH of 2 to 3. The distinctive sour taste of lemon juice makes it a key ingredient in many food products. It is rich in vitamin C and contains smaller amounts of the B vitamins, particularly B1, B2, and niacin. It is used as an antioxidant and color protection stabilizer in fresh frozen foods and seafood processing. It has a strong lemon flavor and appears as a white powder.
