Azodicarbonamide is an oxidizing agent used as a substitute for potassium bromate to help improve the quality wheat flour during maturation. It not only bleaches flour by oxidizing carotene in fresh flour, but also improves flour strength by oxidizing cysteine. The increased strength improves the gas retention of dough and elasticity of bakery products. Rapid oxidation reaction enables shorter storage periods for flour and faster fermentation of dough. Potassium bromate, which ADA replaces, has shown the potential as a carcinogen. Because many countries have forbidden the use of bromates, ADA can be used as an effective alternative.
