Rennet Casein 60 Mesh is obtained by curdling milk with microbial rennet action, bonding the calcium to the casein and creating a rennet gel. The product is white to cream in color and used in Mozzarella cheese as a texturizing and emulsifying agent as well as for its water absorption, and stretch and melting properties.
