Wheat Peptide-E is a milky colored or off-white powder produced from wheat gluten by controlled enzymatic hydrolysis and subsequent refining and spray drying. This product is used as an emulsifier and is a substitute for sodium caseinate. The emulsification stability index is 10% higher than that of sodium caseinate, and it can bear processing at high temperatures while maintaining a good flavor.
