Oleoresins are produced by extraction of raw spices such as black pepper, paprika and capsicum which are mainly cultivated in India. The extraction is made by using hexane, methanol and other solvents which are then removed. There are two groups of oleoresins with different solubility characteristics. One of them is water-soluble, the other soluble in oil. Several components of the oleoresins are the colorants, flavorings and fragrances of each raw spice. Oleoresins are used as a food enhancer or as a coloring in sweets.
