Glucono-δ-lactone USP26 FCCIV is crystalline powder that is easily soluble in water, slightly soluble in ethyl alcohol, and insoluble in ethyl ether. It can be used as a flavoring agent, tofu coagulant, PH reducing agent, and leavening agent. Glucono-δ-lactone USP26 FCCIV is mainly used as a gelling agent for yogurt or cheese but can also be applied in processed meats and tofu products.
