Tara Gum 

Tara Gum is obtained from the seeds of the Tara plant through a thermal-mechanical process. Tara Gum is a hydrocolloid like other edible gums such as gum arabic, xanthan gum, guar gum, locust bean gum and Carrageenan. This product prevents undesirable reactions of syneresis and other disturbances. It is beige in color and has the advantage of being odorless, tasteless, stable and highly resistant to decay. Tara Gum is a polysaccharide special gum that turns into a highly viscous gel at low concentrations. Due to its high content of galactose, Tara Gum, compared with similar products is readily soluble at low temperatures (25 ° C) and is therefore considered an ideal substitute or complement the bean gum, guar, xanthan, etc. It has a great ability to absorb water and becomes a homogeneous gel that maintains its properties to cool or freeze. Tara Gum is used as a thickening and texturizing agent in dairy products, cereals, meat and some canned food. It is also used in ice cream, juices, mayonnaise, sausages, ketchup, cheese, confectionary, mustard, and in baking.
