Penicillium Roqueforti PJ LYO 10 D 

Penicillium Roqueforti PJ LYO 10 D is a medium speed growing blue mold culture. It has low proteolytic and high lipolytic activity. They mold can have a dark blue-green marbled interior. It is most often used in blue mold cheese and blue/white mold cheeses.
