Holdbac YM-B LYO 100 DCU is a culture that inhibits undesired micro-organisms in a biolotical way. It is added together with regular starter cultures and is found in different levels of efficiency for different types of products. It can be used for fermented milk products, quark, mozzarella, feta, large-eyed cheese, emmental and most semi-hard or hard cheeses.
