Choozit Helv A LYO 2 D is an undefined, thermophilic, multiple-strain culture. It is a very robust culture that forms lactic acid of the L(+) and D(-) type. It has high proteolytic activity which makes it an ideal choice for hard cheeses with strong aroma. It can also be used in semi-hard cheeses.
