Choozit TA 60 LYO 125 DCU is a quick, thermophilic, “cooked cheese” culture. It is used for pH stabilization can be used both during the pressing and during the ripening phases of the cheese fermentation process. It can be used with Emmental, hard cheese, Asiago, quark and sour cream.
