Locust Bean Gum is a hydrocolloid used in frozen desserts and dairy products. It is has a bland taste and is very white in color. LBG can be used as a moisture binder in creams and soft cheeses, improving cuttability and mouthfeel. In ice cream it can be used to add body, control heat shock, and prevent lactose crystal. This product can be used in frozen desserts, cream cheese, and other cultured dairy products.
