Nisin is a grey or white natural aqueous powder that is water and food soluble and stable. It functions as a food preservative, utilizing anti-microbial activity against Gram-positive bacteria and their spores. It finds application in fresh milk and dairy products to control bacterial spoilage and extend the shelf life up to six weeks; in liquid egg and egg products to extend the shelf life from seven days to one month; in salads and sauces to increase shelf life up to four times longer; in canned foods to reduce heat processing time and increase shelf life for up to two years; on cured meats and sea foods extends shelf life up to three times longer; and in canned soups, juices, and drinks to inhibit bacteria spore growth.
