Sodium Acid Pyrophosphate (SAPP,FOOD) 

Sodium Acid Pyrophosphate (SAPP,FOOD) is a white crystal powder that is soluble in water, but insoluble in ethanol. This product is used as a leavening agent applied to roast foodstuffs in order to control the fermentation speed. For example, it is applied to crackers and cakes to lower the breakage and make the porous space in good to extend shelf life. It is also commonly applied to instant noodles because it can shorten water resetting time and avoid the stickiness and mushiness of the noodles.
