Lysozyme Chloride is an extract of egg albumen that is used to dissolve cell walls and sterilize gram positive bacteria. It can be used to preserve the shelf life of meat and sea foods as well as to treat odor in cheeses during the fermentation process. Lysozyme Chloride has a shelf life of up to 36 months.
