Instawhip Gelatin - Glucose has a gel strength of 55 ± 15 bloom, and a viscosity of 18.0 ± 5.0. his product has a pH: (10% solution) of 3.60 ± 0.60, and ash level of 1.0% maximum, and a moisture level of 12.0% maximum.
