ScanPro™ T 91 

ScanPro™ T 91 has been developed for use mainly in emulsified products as a pre-emulsion or in dry addition. It is a competitive ingredient providing a good water binding and fat binding capacity (hot emulsions >45°C). The protein is thermo-reversible. It is applied in emulsified products like cooked sausages, cold cuts and liver products. ScanPro™ T 91 is also used in reformed products like pizza ham.

Due to the water binding capacity the use of ScanPro™ T 91 can help improve the overall texture of a wide range of meat products – in cold cuts and reformed products a more firm texture will improve the sliceability of the product. Used in cooked sausages and reformed meats, ScanPro™ T 91 can help reduce formulation costs through reduced purge and an improved slicing yield.
