ScanPro™ 1015/1 

ScanPro™ 1015/1 is a functional animal protein manufactured from natural food grade pork raw material by mechanical and thermal treatment. ScanPro™ 1015/1 is light brown in color, 1 mm in particle size, and it has a slightly roast pork flavor.

It is typically applied to emulsified, ground, fresh and comminuted, dried and fermented products. Emulsified products include: Frankfurters, luncheon meat, mortadella, Vienna sausages, cooked and semi-smoked salami. It is used for ground meat products such as hamburgers and meatballs, and ScanPro™ 1015 is applied in fresh and comminuted products like breakfast sausages and sausage rolls. For dried and fermented products it is used in salami, pepperoni, and chorizo, and reformed products include: reformed ham, pizza ham, and sandwich ham.

Using ScanPro™ 1015 as an alternative to part of the production meat can help reduce formulation costs – for instance by substituting 5 % meat by 1 % ScanPro™ 1015 and 4% water. The water binding capacity of ScanPro™ 1015 helps improve the texture of various meat products. The cooking and frying loss can typically be reduced by 2-3%, depending on the specific recipe.
