Emflake 3868 is made of cold swelling, light yellow potato flakes made by roller drying process, that are unseasoned and unsalted, not coloured, and have a high water capacity. This product is ideally used for for bread and bakery products. The use of 5 % of Emflake 3868 (relates to the flour quantity) can extend the dough by approx. 10 % and a longer freshness can be achieved.

Ingredients include: Potatoes, emulsifier mono- and diglycerides of fatty acids (E 471).
