Enoferm Simi White® 

Enoferm Simi White® is a wine fermentation yeast of the saccharomyces cerevisiae cerevisiae strain, with slow fermentation speed, medium nitrogen needs, and a temperature range of 59-86 degrees Fahrenheit. It produces an overall ester sensory effect, and has been described as contributing a taste of "creamy fruit." It is used primarily in the production of white wines, particularly Chardonnay.
