Noblesse® is an inactivated yeast that can be used in red, rose and white wines. It plays a role in the colloidal balance of the wine. Noblesse® smooths and stabilizes the wine's colloidal balance ersulting in more intense perception of ripe fruit notes and in the smooth fore-mouth sensations, decrease of the aromatic perception "sap/sawdust" notes in wine aged in oak barrel and limitation of ethereal, chemical and burning perception
