Lalvin ICV D21® 

Lalvin ICV D21® is a wine fermenting yeast of the saccharomyces cerevisiae cerevisiae strain, with moderate fermentation speed, low nitrogen needs, and a temperature range of 59-82.4 degrees Fahrenheit. It enhances varietal character, and unlike most wine yeasts, it contributes both higher acidity and positive polyphenol reactive polysaccharides, and produces intense fore-mouth, mid-palate tannin structure, and fresh aftertaste in red wines. It is used in the production of red, white, and rosé wines.
