Panodan® 140 K is a Kosher-certified blend of diacetyl tartaric acid ester of mono-diglycerides (DATEM), wheat starch and alpha amylase. Calcium sulfate and calcium silicate are added as anti-caking agents. The enzyme complex exhibits its main activity on the hemicellulose of flour. It is produced by fermentation of selected fungal microorganisms. This product is ideally used in yeast-raised bread and doughnuts.
