GRINDSTED® Cellulose Gel DAI is a microcrystalline cellulose manufactured from naturally occurring wood cellulose in a gel form. This product provides freeze/thaw and foam stability, stabilizes emulsions, adds creaminess, enables fat reduction, prevents sedimentation, and improves flowability. GRINDSTED® Cellulose Gel DAI is most commonly used in frozen dessert, whipped topping, diluted milk, chocolate milk, and cheese applications.
