Coffee beans contain a significant amount, while tea leaves and yerba mate plants contain less. Cocoa beans also contain caffeine, but they contain much higher levels of another alkaloid called theobromine. When caffeine is removed from the source plant and reduced to its most natural state, it forms a white powder. This powdered form is actually the scientific definition of bitter, which is why many beverages containing caffeine also contain copious amounts of sugar or other sweeteners. Some proteins in the thaumatin family of sweeteners are roughly 2000 times more potent than sugar. Although very sweet, thaumatin's taste is markedly different from sugar's. The sweetness of thaumatin builds very slowly. Perception lasts a long time, leaving a liquorice-like aftertaste at high usage levels. This is because its usually added in conjunction with other B vitamins, such as vitamin B2 or riboflavin, vitamin B3 or niacin, and vitamin B6 known as pyridoxine, as well as others. While vital to virtually every cellular function in the body where it is broken down into thiamin pyrophosphate, one of these areas is the proper function of the human nervous system.
