X-Pand'r® 612 Snack Starches play an important role for dough binding, machinability and texture development in bakery and snack applications. This bland white powder is labeled as ‘corn starch’ and it is suitable for use in ‘natural’ products. X-Pand'r® 612 Snack Starches are instant, waxy maize starches which are designed to deliver a wide range of textures in sheeted, formed, and extruded snacks. X-Pand'r® 612 Snack Starches have the unique ability to form cohesive, pliable and non-sticking dough that could be easily processed through conventional sheeters, extruders, or stamping dyes without the use of excessive heat or pressure. X-Pand'r® 612 Snack Starches develop and maintain expanded texture in baked, fried, and extruded snacks. It is typically blended with other dry ingredients of snack formulations before fat and water addition. For sheeted snacks, the dough is subjected to multiple reductions through a series of sheeter rolls to form a thin and cohesive dough sheet.
